MyForest Foods & Marley’s Menu: MyBacon Breakfast Sandwich

Start your morning right with the ultimate MyBacon Breakfast Sandwich! Created in collaboration with Marley's Menu, this deliciously satisfying recipe features smoky MyBacon paired with wholesome ingredients. Perfect for a hearty, feel-good breakfast everyone will love!


WHAT YOU’LL NEED:

  • 6 oz. (1 package) MyBacon

  • 1/2 Avocado

  • 2 Tbsp Lemon Dijon Sauce

  • 2 Slices Bread of Choice

  • 1 Tbsp Unsalted Butter

  • 2 Slices Cheddar Cheese

  • 2 Large Eggs

  • Salt & Pepper to Taste

Dijon Sauce:

  • 1/4 Cup Mayonnaise or Greek Yogurt

  • 2 Tbsp Lemon Juice

  • 1 Tbsp Dijon Mustard

  • 1 tsp Garlic Powder


WHAT TO DO:

  1. Cook MyBacon in a large skillet following package instructions (See here for tips!). Set aside and let cool on a paper towel. Leave excess coconut oil in pan.

  2. Mash your avocado and make your sauce by whisking all the ingredients together.

  3. Use about 1 tablespoon of butter to spread evenly over both sides of both pieces of bread. Add remaining butter to the frying pan with leftover coconut oil from MyBacon and allow to melt over medium heat.

  4. Add eggs to the pan and scramble to your preferred temperature. Slide them out of the pan and set aside.

  5. Place the bread in the pan to toast it. Once it’s golden brown on the first side, flip and add the cheese to one of the slices. Once the cheese is melted and the bread is golden brown on both sides, it’s time to assemble your sandwich.

  6. Start with the slice of bread that has the cheese. Add the mashed avocado on top, followed by the scrambled egg. Top with the MyBacon, add sauce to the top slice of bread and use it to complete your sandwich. Enjoy!
