MyBacon Steamed Bao Buns being put together by our chef

Serves: 4

Soft, pillowy bao buns filled with delicious MyBacon, topped with your favorite pickled veggies and a dipping sauce. You can grab pre-made buns from the frozen aisle in your local Asian market or use vegan biscuits, this easy, flavor-packed recipe is a must-try.

WHAT YOU’LL NEED:

  • 6 oz. (1 package) MyBacon

  • 8 frozen bao buns, or 8 oz. (4 biscuits) from a 16 oz. tube of refrigerated biscuits (we found Immaculate Organic Flaky Biscuits work best), reserve the rest for another use.

  • 1 carrot, peeled, shaved with peeler

  • 1/2 English cucumber, thinly sliced crosswise into rounds

  • 1 tsp sea salt

  • 4 tsp sugar

  • 1/2 cup rice vinegar

  • 1/2 avocado, pitted, peeled and thinly sliced

  • 1 Tbsp sesame seeds (black or white)

  • 3 scallions, green part only, slice on diagonal

  • 1 small bunch cilantro, leaves and tender stems only, roughly chopped

  • 3 Tbsps vegan hoisin sauce (such as Lee Kum Kee Hoisin)

  • 1/2 tsp vegan chili sauce (such as Sky Valley Foods Sriracha)

  • 1 Tbsp warm water

WHAT TO DO:

  1. Cook MyBacon in a wide, high-sided skillet following package instructions (See here for tips!), about 6 minutes. Cool, cut slices crosswise in half and set aside. Wipe pan and fill with 2 inches of water. Place a steamer basket (or bamboo steamer) lined with parchment paper with slits cut into it or spray with nonstick vegetable spray. Bring water to a boil.

  2. If using canned ready-baked biscuits - carefully cut 4 biscuits in half so you have 8 biscuits. Roll or press each biscuit to 1/8 in thick. Spray the biscuits tops with nonstick vegetable spray and fold in half.

  3. Arrange buns in steamer, spacing evenly so they do not touch, cover with a lid and steam for 10 minutes, until the buns are cooked through and puffed. Carefully transfer buns to a plate to cool slightly.

  4. Rub cucumber and carrot slices with sea salt and sugar, toss into a small bowl and pour in rice vinegar. Allow to pickle for 10 minutes. Pat dry.

  5. In a small bowl, stir hoisin, chili sauce, and water until smooth.

  6. Fill each bun with MyBacon, pickled vegetables, avocado, a drizzle of hoisin sauce mixture, cilantro, scallions and sesame seeds.

  7. Enjoy!
