MyBacon Tomato Basil Flatbread

MyBacon is divine on pizza! Scatter it atop it on your favorite pie, or try this quick and easy combo; a staff favorite.


WHAT YOU’LL NEED:

  • 2 slices of MyBacon, cooked & chopped into 1-inch squares

  • 1 large ready-to-bake pizza crust

  • 1 large onion, thinly sliced

  • 1/4 cup white wine or sherry

  • 1-2 Tbsp olive oil

  • 1/2 cup pesto sauce

  • 1/2 cup fresh basil leaves, loosely packed

  • ~10 cherry tomatoes, halved

  • ~10 mini mozzarella balls, halved

  • Fresh cracked pepper


WHAT TO DO:

  1. Cook 2 slices of MyBacon per instructions on the pack (See here for tips!) and set aside. Leave oil in your pan.

  2. Add thinly sliced onion to the warm pan, along with 1-2 Tbsp olive oil as needed. Sautee onion slices on medium heat, adding 1 Tbsp of wine at a time (to de-glaze the pan) as the slices caramelize. Cook until they appear “melted” and thoroughly browned.

  3. Prepare your pizza crust as needed and preheat your oven to its specifications.

  4. Spread pesto evenly across the top of the pizza crust. Dot the surface with mozzarella ball halves cherry tomato halves. Fill in the gaps with torn basil leaves and caramelized onions. Dust with fresh cracked pepper.

  5. Bake for 10 minutes. Remove from oven and scatter MyBacon squares on top before cooking for another 5 minutes or until crust is golden and cheese is nice and melty. Cool slightly before cutting. Dig in.
